Nutmeg Logs
1 cup butter, softened
3/4 cup sugar
1 egg
2 tsp. Watkins Vanilla Extract
3 cups all purpose flour
1 tsp. Watkins Nutmeg
1/4 tsp. salt
In a large bowl, cream the butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, nutmeg and salt; gradually add to creamed mixture and mix well.
Divide dough into 14 pieces. Shape each portion into a 12 x 1/2 inch thick rope. Cut ropes into 2 in pieces. Place 2 inches apart on greased baking sheets. Bake at 350 degrees for 9 to 12 minutes or until set and bottoms ar lightly browned. Cool for 1 minute before removing to wire racks to cool completely.
For frosting, in a small bowl, beat butter until fluffy. Add the confection-ers’ sugar and extracts; beat until blended. Beat in enough cream to achieve desired consistency. Frost cookies. Sprinkle with nutmeg. Store in an airtight container in the refrigerator. Yield: 7 dozen
Frosting
1/3 cup butter, softened
2 cups confectioners’ sugar
1 tsp. Watkins Rum Extract
1 tsp. Watkins Vanilla Extract
2 to 3 T half and half cream
Watkins Nutmeg
Iced Coconut-Orange Cookies
1/2 cup butter, softened
2/3 cup sugar
1 egg
3 T. orange juice
1 T. lemon juice
1 tsp. Watkins Orange Peel
1/2 tsp. Watkins Lemon Peel
1 tsp. Watkins Coconut Extract
1 3/4 cups all purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
1 cup flaked coconut
In a small bowl, cream butter and sugar until light and fluffy. Beat in egg. Beat in orange and lemon juices, peels, and extract. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Beat in coconut.
Drop by rounded teaspoonfuls 2 in. apart onto baking sheet sprayed with Watkins Cooking Spray. Bake at 350 degrees for 10 to 2 minutes or until edged are lightly browned. Cool for 1 minute before removing to wire racks to cool com-pletely. Ina small bowl, beat the icing ingredients until smooth. Spread over cookies. Let stand until set. Yield 3 dozen.
Icing:
1 1/3 cups confectioners’ sugar
5 tsp. orange juice
1 tsp. lemon juice
1/2 tsp Watkins Orange Peel
1 drop Watkins Yellow Food Coloring, opt.
